Is the beef grass-raised or grass-finished? Our beef is 100% raised AND finished on grass with no grain ration at all. We do provide our herd with mineral supplements including salt, phosphorus and sulphur to ensure they maintain health throughout the year.
What breed of cattle do you run? We have a herd of Brahman cows and are crossing Senepol bulls with them, their off-spring being a Senebrah. The brahman has a very high tolerance of harsh conditions and the Senepol is one of the highest scoring carcasses in the MSA Grading system yet still able to withstand the Northern Territory conditions.
Is the meat fresh or frozen? All of our meat is delivered fresh in cryovaced bags. It will last for up to 3 weeks in a fridge un-opened or 1 year frozen. Once bag is opened, it is best to cook within 2 days.
Can I buy individual cuts of beef? Our production system relies on the whole animal being sold before the next one is processed. We do have prime cuts available however as these cuts only constitute around 15% of the carcass we do not guarantee availability. This helps to keep prices down and ensure there is no waste. If you have a specific request please feel free to email us and we will do our best to accommodate.

Are the sausages gluten-free? Yes, all of our sausages are gluten-free.
Does the corned silverside contain nitrates? We corn our silverside in the traditional way which does contain nitrates (preservative 223). If you would like a special order of salted meat please contact us.
Are the cuts whole or sliced? We sell sliced cuts and small whole roasts at the markets. Our butcher can produce large whole cuts upon request.
Do you age your beef? We dry age certain prime cuts to enhance the flavour and tenderness of the cut. We use special dry-ageing cryovac bags to age our scotch, rump-cap and fillet for approximately 14 days before sale. We do not age the carcass as a whole.
